Mr Bean

Amity brought home a gift box around Christmas time that had a 10-bean mix for soup in it. It had a few spice mixes and various other bean mixes put together by a local women's homeless shelter. In any event, rather than have it sit around in the cupboard for a couple months, I decided to make a meal out of it right away. I ditched the spice mix that came with it and added my own flavors. After soaking the 10-bean mix overnight (I can't recall the specific beans, and frankly I can't even name 10 beans) I cooked them with a can of tomatoes, onions, garlic, carrots, celery, bell pepper, a dried chipotle, a smoked pork hock, oregano, and parsley. Not sure I've actually made bean soup before, but this was honestly one of the tastiest thingsI have ever made. The chipotle (not surprisingly) gave it just the right heat and along with the pork hock gave it the perfect smoky saltiness. We've been eating it for a few days, and now that it's gone, I'm already thinking of the next bean soup that I'll be making. mmm mmm good.

  1. if you're getting into beans, should really owe it to yourself to order some from rancho gordo once you've exhausted the varieties at the buford market
