leftovers

i had several leftovers from a few days of cooking i wanted to use up. on that list we have harissa paste, homemade milk-cheese, some cooked rice, and a lentil dish that included shiitake, bacon, carrots, celery, onions and some red wine.




first up we have a roasted beet salad, sprinkled with homemade cheese a touch of vinegar, olive oil and sea salt. the beets were wrapped in foil and roasted for an hour at 425 degree before being topped with the cheese.




second up i made lentil cakes with the leftover rice and lentils. just stirred the two up with a bit of fresh whole wheat breadcrumbs, a couple eggs and some seasoning. the mix was a bit loose, but i set the patties on a non-stick pan with a bit of olive oil. I cooked them slowly to let the egg set through the entire patty before flipping.




lastly i mixed the harissa paste with some ground pork, breadcrumbs and an egg to make some little pork meatballs. after searing them off  i kept them warm in some homemade tomato sauce and served them with some chopped parsley. simple, but a delicious way to wrap up this meal of leftovers.

  1. your leftovers look better than my leftovers. you should move back to the bay area at some point so I can steal your leftovers.
