inspired by a soup i had at
Duck Fat in Portland, ME earlier this summer, as well as by the Atlanta heat, I decided to give chilled cucumber soup a whirl. i wanted it to be simple and full of cucumber goodness. so i started with 5 cucumbers (peeled and seeded) blended with perhaps a cup to a cup and a half of homemade plain yogurt, a squeeze of lime, a fair amount of salt, and a bit of water to thin it all out. i've found various recipes for cucumber soup that call for buttermilk and chicken stock, but thought those would make the soup too heavy and dull. this version worked out quite nicely and just needed a bit of mint and some spicy
harissa thinned out with olive oil to round out the flavors. overall a great summer soup, quick & very refreshing.
