banana peppers



sheryle, one of amity's coworkers, gave us a bag full of banana peppers from her garden yesterday, and so i tried to come up with a few tasty ways to use them up. luckily, i'd watched a jamie oliver show about chilies recently and had a few ideas in mind. the first dish was a vegetarian stuffed pepper (yup, vegetarian! not even a drop of bacon fat! crazy i know!!). I bought a couple poblano peppers, cut them in half and made a little vegetable stuffing to fill them with. The stuffing included the banana peppers, tomatoes, capers, olives, basil, tarragon, parsley, salt, and pepper. Once stuffed i sprinkled some fresh breadcrumbs on top and roasted it in the over for 35 minutes or so at 425. The poblanos provided some subtle lingering heat, while the banana peppers retained their crunch. quite tasty.


I also made a quick shrimp dish with some of the same ingredients. banana peppers, basil, capers, garlic and lemon - all sautéed in a bit of olive oil and butter. nothing fancy, but the two dishes went well together and made quite a tasty dinner. thanks sheryle!!
