pine street

This weekend we discovered a small salumeria in Atlanta that cures their own bacon and salamis. Pine Street Market uses all locally grown pork to make their salamis and sausages, and I must say they are amazingly delicious and authentic. The Berkshire pigs come from a small farm about an hour west of Atlanta. We sampled a few (salamis... not pigs!) in store before bringing home a small chorizo, which is pretty much  perfect. The flavors, the fat, the texture - it's all on point. They had plenty of other salamis besides the chorizo, including saucisson sec, a lovely coppa,  and a variety of fresh sausages too. They also sell some locally made cheeses and bread and so we got a small slice of Tomme cheese, which is a light mild raw cow milk cheese - this one of course hailing from Georgia as well.


Dinner consisted of a simple salad with poached eggs, pears and croutons and the small plate of the cheese & salami you see above. Can't wait to go back and try more!
